Vegan Pancakes
Ingredients:
- 1 cup whole wheat flour
- 2 tsp baking powder
- 1/8 tsp sea salt
- 1 cup soy milk
- 1 Tbsp honey (gently warmed until watery consistency)
- 2 Tbsp water
- 2 Tbsp olive oil
Preparation:
Preheat pan or griddle to medium heat. Grease lightly with olive oil – just enough to prevent sticking.
In a medium-sized bowl, combine flour, baking powder, and salt. Make a well in the center and pour in soy milk, warm honey, water and olive oil. Blend well. (You can add a mashed banana or blue berries for extra flavor)
Pour batter, about 1/4 cup per pancake onto hot griddle. Cook until bubbles form and just start to pop on top surface; flip pancake with a wide spatula to lightly brown other side. (flip pancakes only once).
Strawberry Topping
Ingredients:
- 3 cups fresh strawberries, sliced
- 2 Tbsp honey (gently warmed until watery consistency)
- 1Tbsp water
Preparation:
Slice strawberries in or over the bowl you will be using for mixing to conserve all of the juice. Warm water and honey in the microwave for ten seconds, and poor over strawberries. Mix well until coated. Refrigerate. Use for topping on Pancakes, Crepes or even as a side for your morning granola.
