Guacamole Tostada

Ingredients:
- 8 Tostada Shells
- 1 cup of your favorite guacamole
- 1 15oz can whole black beans, heated
- 2 cups shredded cabbage
- 1 cup pico de gallo (recipe below)
- Salsa and fresh lime (optional)
Preparation:
Tostada shells: Preheat oven to 350°F. Bake for approximately 15 minutes. Turn every seven minutes until very lightly browned and crunchy. (Once they start to brown, watch them closely, they turn very brown and even can burn before you realize).
Spread guacamole onto tostada shell first. Then layer remaining ingredients. Top with salsa and fresh squeezed lime to taste. Serve with salad or shredded cabbage.
Pico de Gallo
Ingredients:
- 1/2 white onion, diced
- 2 tomatoes, diced
- 1/2 cup chopped cilantro
- Juice 1/2 Lime
Preparation:
Combine all ingredients and refrigerate for at least 1 hour to allow ingredients to mingle for best flavor.
