Red Salad
Ingredients:
- 1/2 small red cabbage, finely shredded
- 1 medium carrot, shredded
- 1 red onion, thinly sliced
- 1 red bell pepper, thinly sliced and chopped
- 1 yellow pepper, thinly sliced and chopped
- 1 16oz can red kidney beans, drained and rinsed
- 1 cup walnuts
- 1 apple, chopped
- ½ cup raisins
- 1 small mango, chopped
Dressing
- 2/3 cups apple cider vinegar
- 4 Tbsp honey
- 2 Tbsp curry powder
- 1 tsp turmeric
- ½ cup olive oil
- ½ tsp sea salt (optional)
Preparation:
In a large bowl, mix cabbage, carrot, onion, peppers and kidney beans.
Salad dressing: Mix together apple cider vinegar, honey, curry powder, turmeric and salt. Add olive oil while whisking vigorously. Pour over salad and mix well.
Refrigerate until time to serve. Best if served within 12 hours of preparation.
