Lentil Soup

  • 2 Tbsp olive oil
  • 1 cup diced white onion
  • 1 cup chopped celery
  • 1 can green chili
  • 2 cups red lentils
  • 6 cups water
  • 1 tsp ground fennel powder
  • 1/4 tsp ground mustard powder
  • 1/4 tsp celery salt
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 1/2 tsp granulated garlic
  • 1/2 tsp chili powder
  • Salt (desired amount)

Preparation:

Soak lentils in 4 cups water for 2 hours, drain and rinse. In a large pot, heat oil over medium. Sauté white onion and celery until onions are soft and slightly translucent.  Add remaining ingredients and simmer together for 20 – 30 minutes until lentils are cooked soft.  For smooth consistency, you may blend soup together with a hand mixer until creamy.  Serve with salad to approach the goal of a 75% raw meal.
