Hummus
Ingredients:
- 2 16oz cans garbanzo beans
- 1 tsp real salt
- 1/2 tsp black pepper
- 2 tsp paprika
- 1 tsp cumin
- 2 cloves crushed garlic
- 1 to 2 medium limes, juiced
- 1/4 cup olive oil
Preparation:
Drain and reserve the liquid from both cans of garbanzo beans.
In a food processor, combine garbanzo beans and ½ cup of the liquid. Add salt, black pepper, paprika, cumin, garlic, and lime juice. Pulse or chop with food processor until desired consistency. For smoother hummus, add additional olive oil or liquid from garbanzos. Serve with Panini, flatbread, crackers, and celery. Top with vegetable garnishes for hor dourves. This is also a healthy alternative as a spread for sandwiches in place of mayonnaise.
Optional:
- 1/2 cup cilantro
- 2 whole, pickled jalapeños
- 10 green olives
- 1 cup chopped spinach
- 4-8 medium fresh basil leaves
(Any of these can be added to the recipe individually or together. We added all of the above for a wonderful Mexican flavored hummus. Be creative!)
