Cucumber Tomato Sandwich
Ingredients:
- 4 pieces Panini, toasted
- 1 cup hummus or mashed avocado
- 1 tomato, sliced thin
- 1 cucumber, sliced thin
Preparation:
Toast Panini. Spread hummus or avocado evenly over Panini. Top with tomato or cucumber (or layer with tomato and cucumber together). Slice into sandwich size pieces and serve with salad, vegetables, or fruit.
