Chick Pea Salad

  • 1 16oz can chick peas (garbanzo beans)
  • 4 green onions, chopped
  • 1 red onion, sliced
  • 1 red bell pepper, diced
  • 2 tomatoes, diced
  • 1 bunch romaine lettuce, torn

Dressing

Ingredients:

  • 1 tea dried oregano leaves
  • ¼ tea dried rosemary
  • ¼ tea basil
  • 2 Tbsp lemon juice
  • 1 Tbsp white wine vinegar or apple cider vinegar
  • ¼ cup olive oil

Preparation:

In a large bowl, combine chick peas, green onions, red onion, and bell pepper. In a jar, combine oregano, rosemary, basil, lemon juice, vinegar and oil. Shake well. Pour over garbanzo mixture. Cover and refrigerate 20 minutes. Add tomatoes and lettuce. Mix well and serve cold.
