Chick Pea Salad
Ingredients:
- 1 16oz can chick peas (garbanzo beans)
- 4 green onions, chopped
- 1 red onion, sliced
- 1 red bell pepper, diced
- 2 tomatoes, diced
- 1 bunch romaine lettuce, torn
Dressing
Ingredients:
- 1 tea dried oregano leaves
- ¼ tea dried rosemary
- ¼ tea basil
- 2 Tbsp lemon juice
- 1 Tbsp white wine vinegar or apple cider vinegar
- ¼ cup olive oil
Preparation:
In a large bowl, combine chick peas, green onions, red onion, and bell pepper. In a jar, combine oregano, rosemary, basil, lemon juice, vinegar and oil. Shake well. Pour over garbanzo mixture. Cover and refrigerate 20 minutes. Add tomatoes and lettuce. Mix well and serve cold.
